Imperial Oatmeal Stout Aged in Bourbon Barrels
This yearís release is a blend of 24, 18, 12, and 8-month Bourbon Barrel-Aged Dark Star in 7-12-year old Kentucky bourbon barrels. The roasted and chocolate malts complement the smooth oats to bring you a stout delight wrapped in the gentle embrace of bourbon barrel-aged warmth. A touch of sweetness dances in balance with the hops to finish with a wave, and then sheís gone.
2-Row Pale, Roast Barley, Crystal-60, Chocolate, and Carafa-2 malts with Flaked Oats and Columbus, Willamette, and Cascade hops. -
Double Barrel-Aged Marshal Zhukov’s

Description:
This Russian Imperial Stout is dedicated to Georgy Zhukov, arguably one of the finest generals of World War II, and to the barrels of the weapons used by Zhukovís 1st Belorussian Front of the Red Army to push through the German-occupied territory of East Prussia in early 1945. Weíve aged this monolithic imperial stout in both rum and bourbon barrels to add a legendary depth of character and flavor including flavors of vanilla, dried fruit and baking spices to the dark chocolate and fresh-ground espresso qualities of the base beer.

Dark chocolate, mocha, cinnamon and molasses aromas all compete for attention on the nose, with a soft alcohol spiciness and dark fruit notes complimenting. Planifolia is a hand-selected blend of some of our favorite casks of stout in aged Breckenridge Bourbon barrels, to be showcased with just vanilla. This combination exudes tons of deep floral and smokey aromas, with a solid roasty malt backbone providing a platform for the vanilla to shine.

A Small Still Voice

Blended with Shaun Hill of Hill Farmstead and The Lost Abbey’s Tomme Arthur, this beer has been a year, and what a year, in the making. Brewed and blended in San Marcos and Dry-Hopped with Cascade that Shaun personally chose, A Small Still Voice was bottled in February, and it’s spent all of 2020 slumbering.

Description: Oude Fermier from Pinot Noir Puncheons. Coeur de Cuvée is a series of blends of some of our finest wine barrel fermented and aged Saisons. This sixth release contains select Pinot Noir Puncheons of Oude Fermier, each of which was barrel-fermented and aged for 14 months before blending and being naturally conditioned in this bottle. A beer that we believe will continue to elevate the standards and quality of the CDC lineup. We are incredibly proud of the richness the higher toasted oak in the Pinot Noir Puncheon provides, a fullness that is exciting and a balance to the complexities that have evolved over more than a year in oak.

Description:
A collaboration with Tired Hands Brewing. With a recipe largely inspired by the hazy IPA craze, we still ran this beer through our coolship for a truly wild fermentation. After fermentation and extended aging in oak, we transferred and blended this and then dry hopped it three separate times. This is far more aromatically and flavorfully hoppy than any other beer we’ve made. Massive mango, citrus and pineapple character are rounded by vanilla from the oak and an underlying wildness.

The resulting beer’s aroma calls you in, while a well rounded mouthfeel and gentle acidity invite another sip. All of these, the sirens of our Family Whistle.

It was blended from Zinfandel (Napa, CA), Whiskey/Pinot Noir (Portland, OR) & Pedro Ximenez Sherry (Spain) barrels for 1 year and then double matured in a former Burgundy barrel from Dashe Cellars in Sonoma, CA. This version was packaged on 10/21/2015.

Saison du Fermier is the harmony of new and old. It is robust and has the paler color of modern Saisons, yet it is balanced with the brightness, depth and rustic character of the wild microflora found on our family’s Missouri farm. This limited expression of Saison du Fermier was fermented in and aged in Pinot Noir puncheons for 7 months before being naturally conditioned in this bottle.

The Orchard
Brewery: De Garde (Tillamook, OR)
Description:
A spontaneous wild ale, inoculated in our coolship, then fermented and aged for an average of 20 months in oak. After aging, select barrels were chosen and blended into secondary oak tank for refermentation on fresh Oregon grown Peaches, Nectarines and Apricots from Baird Family Orchards. We tasted and tested the tanks after approximately two months, then blended the final components again into tank for bottling. Naturally conditioned for approximately five months and vibrantly fruity and funky, we are now excited to share!

Amis Our Toujours

Description:
Translates to Friends Forever and is a collaboration brewed with one of our closest and dearest friends, Brad Clark of Jackie O’s Pub and Brewery in Athens, Ohio. Our shared love of vibrant fruit mixed with our cultures was the inspiration for this wild ale. Fermented in Oak with a blend of cultures from Missouri and Ohio, this Missouri/Ohio Wild ale was then aged on Apricots and Mangoes before being blended and naturally conditioned in the bottle.

This year’s release of B-Bomb is aged in 12-year-old American Oak bourbon barrels and is a blend of 9, 12, and 24-month old barrel strength Winter Ale. This special edition adds toasted coconut to complement the bourbon, oak, cacao, and leather notes achieved from B-Bomb’s extended barrel aging and barrel blending. Each barrel contributes a different note, and combining each barrel to create a coherent tone is a distinct art and true pleasure. Le Roar Grrrz Framboise

Description:
100% spontaneously fermented Belgian style ale, barrel aged for an average of at least two years, produced in the spirit of classic Pajottenland Gueuze. Upon proper maturity being reached, the still beer (Lambic) is then racked onto an abundance of Red Raspberries for an additional 6 months. With the essence of the fruit extracted, and an addition of Belgian candy sugar, it is then racked into bottles for several more months to bottle condition, yielding a soft and natural carbonation. Life Is Round is a deep crimson colored Barleywine blended from Old Fitzgerald, Blantons, and Weller barrels. A duo of Barleywines coalesce into aromas of dark cherry, dried plum, vanilla, and marshmallow. The blend reveals flavors of marzipan, English toffee, brown sugar taffy, and homemade caramel. Bright notes of dark raisin and a hint of baking spice bear a nod to the distinguished Barleywine culture from abroad.

Description:
Imperial stout with Cabernet Sauvignon grapes aged in French oak puncheons. This varietal of our Black Tuesday imperial stout is blended and fermented on the skins and must of 100% de-stemmed Napa Cabernet Sauvignon grapes from the Mount Veeder viticultural area of Napa Valley. The grapes were sourced and processed by our good friends from Erosion Wine Co. After maturing for nearly a year in French oak puncheons, this release vanquishes the boundaries between wine and beer in a full-bodied foray with notes of cocoa, berries, cassis, and soft tannins.
